Blue Stilton Cropwell Bishop Extra is a Protected Designation of Origin (PDO) blue cheese, produced exclusively in 6 dairies across Derbyshire, Leicestershire, and Nottinghamshire, using pasteurized cow’s milk. Its flavor is milder and less salty than other blue cheeses. It takes 78 liters of milk to produce 8 kg of Stilton cheese.
