Graviera Cheese from Crete
Graviera of Crete is one of Greece’s most exquisite hard cheeses, made exclusively from 100% fresh sheep’s milk in Rethymno.
During its initial maturation, lasting several months, it develops a natural rind and a semi-hard texture with characteristic small holes. Its color is pale yellow to white, with a light yet rich aroma and a subtly sweet flavor with a long aftertaste. The butterfat gives it the distinctive taste of sheep’s butter.
