Ossobuco Vulcano – Veal Ossobuco

Ossobuco Vulcano is veal ossobuco seasoned with salt and a blend of peppers. For perfect oven roasting, cover with parchment and foil and bake at 170°C for about 2 hours, then uncover for 30 minutes to brown. For the braised preparation, cook for approximately 4½ hours at 120°C in a casserole with wine (preferably semi-sweet) and vegetables such as carrot, onion, mushroom, garlic, and spices (thyme, bay leaf, allspice, cinnamon, clove). Each piece weighs around 1.8kg and serves 4 people. Ideal for gourmet family meals.
