Step 1 – Cook the chicken:
Heat a little oil in a wok or non-stick pan. Add the diced chicken breast and sauté until golden.
Step 2 – Add the vegetables:
Add the carrot, zucchini, mushrooms, and onion (all cut into thin sticks). Stir-fry until slightly tender.
Step 3 – Prepare the noodles:
In a bowl, place the rice noodles and cover with hot water. Let them soak until soft, then drain well.
Step 4 – Combine everything:
Add the sweet corn, soy sauce, and teriyaki sauce to the pan with the chicken and vegetables. Mix well, then toss in the softened noodles. Stir-fry until all flavors are combined and the sauce coats the noodles.
Step 5 – Garnish & serve:
Top with freshly chopped spring onion and serve immediately.
