Step 1 – Season & cook the chops:
Rinse the pork chops well. Season with salt, pepper, and chili powder on both sides. Place in a non-stick pan with a splash of water to soften and cook lightly. Add olive oil and sear on both sides until golden brown.
Step 2 – Caramelize the onions:
Slice the onions into medium-thick rings and the mushrooms into slices. In a non-stick pan, melt the butter over low heat. Add the onions and mushrooms, sauté gently until golden. Pour in the balsamic vinegar and sugar, stirring until the liquid evaporates and the vegetables caramelize into a rich, glossy sauce.
Step 3 – Serve:
Place the pork chops on a platter, top with the caramelized onion and mushroom mixture, and serve with crispy fried potatoes.
